1 lb (450g) large shrimp, peeled and deveined

1 cup couscous

1 ½ cups vegetable or chicken broth

2 tablespoons olive oil

1 tablespoon smoked paprika

3 cloves garlic, minced

1 medium onion, finely diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 teaspoon ground cumin

½ teaspoon salt

¼ teaspoon black pepper

¼ cup fresh parsley, chopped (for garnish)

½ lemon, juiced

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the vegetable or chicken broth to a boil. Stir in the couscous, remove from heat, cover, and let it sit for 5 minutes. Fluff with a fork and set aside.

    Season the Shrimp: In a bowl, combine the shrimp with smoked paprika, cumin, salt, and pepper. Mix well to ensure the shrimp are evenly coated with the spices.

      Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

        Cook the Shrimp: Push the sautéed vegetables to one side of the skillet. In the cleared space, add the seasoned shrimp. Cook for 2-3 minutes on one side, until pink, then flip and cook for another 2-3 minutes until fully cooked.

          Add Tomatoes: Stir in the cherry tomatoes and cook for another 2 minutes until they are slightly softened.

            Combine Ingredients: Add the fluffed couscous to the skillet. Drizzle with lemon juice and toss everything together until well mixed and heated through. Adjust seasoning to taste.

              Serve: Remove from heat and serve hot, garnished with fresh chopped parsley.
