1 can (15 oz) black beans, drained and rinsed

1 cup sharp cheddar cheese, shredded

1/2 cup smoked gouda cheese, shredded

1/2 red onion, finely diced

1 red bell pepper, diced

1 jalapeño, seeded and minced (optional for spice)

1 tsp smoked paprika

1/2 tsp ground cumin

1/2 tsp garlic powder

Salt and pepper to taste

4 large flour tortillas

2 tbsp olive oil

Fresh cilantro, chopped for garnish

Sour cream or Greek yogurt, for serving

Prepare the Filling: In a large mixing bowl, combine the black beans, both cheeses (cheddar and gouda), red onion, red bell pepper, jalapeño, smoked paprika, cumin, garlic powder, and a pinch of salt and pepper. Mash the black beans slightly with a fork to create a creamy consistency while leaving some whole for texture.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat. You can also use a non-stick pan or a griddle for cooking the quesadillas.

      Assemble Quesadillas: Lay one tortilla flat on a clean surface. Spoon a generous amount of the black bean mixture onto one half of the tortilla, leaving some space at the edges. Fold the other half of the tortilla over the filling, pressing down gently.

        Cook the Quesadillas: Carefully place the quesadilla on the heated skillet.
