1 can (15 oz) chickpeas, rinsed and drained

1 ripe avocado

1 tablespoon lemon juice

1 garlic clove, minced

1 teaspoon ground cumin

Salt and pepper to taste

8 small whole grain or gluten-free tortillas

1/4 cup cherry tomatoes, diced

2 green onions, chopped

Fresh cilantro or parsley for garnish

Optional: red pepper flakes for a kick

Prepare the Chickpeas: In a mixing bowl, add the rinsed chickpeas. Use a fork or a potato masher to gently smash the chickpeas until they are slightly chunky, yet spreadable.
