2 lbs Yukon Gold potatoes, peeled and cubed

1 medium head of cauliflower, cut into florets

1 tablespoon olive oil

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon garam masala

1 teaspoon red chili powder (adjust to taste)

1 teaspoon salt, or to taste

1/2 teaspoon black pepper

1/4 cup milk (or dairy-free alternative)

2 tablespoons butter (or plant-based butter)

1/2 cup grated cheddar cheese (optional for a cheesy finish)

1/4 cup chopped fresh cilantro, for garnish

Lemon wedges, for serving

Instructions
 

Boil the Potatoes and Cauliflower: In a large pot, bring water to a boil. Add the cubed potatoes and cauliflower florets. Cook for about 15-20 minutes or until both are fork-tender. Drain and set aside.

    Sauté Spices: In a large pan, heat the olive oil over medium heat. Add cumin seeds and let them crackle for about 30 seconds. Stir in turmeric, garam masala, red chili powder, salt, and black pepper. Cook for another minute until aromatic.

      Mash the Potatoes and Cauliflower: In a large mixing bowl, combine the drained potatoes and cauliflower. Add the sautéed spices, milk, and butter. Use a potato masher or fork to smash until combined but still slightly chunky.

        Prepare the Casserole Dish: Preheat your oven to 375°F (190°C). Transfer the smashed mixture to a greased 9x13 inch casserole dish. Spread it evenly and smooth the top with a spatula.

          Add Cheese (Optional): If using cheese, sprinkle it evenly over the top of the casserole.

            Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until it’s heated through and the top is slightly golden.
