Slow Cooker Veggie Bolognese

2 medium zucchinis, diced

1 large carrot, finely chopped

1 red bell pepper, diced

1 cup mushrooms, chopped

1 medium onion, diced

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 can (15 oz) lentils, drained and rinsed

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon thyme

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

2 tablespoons olive oil

1 cup vegetable broth

Fresh basil for garnish

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prep the vegetables: Chop all the vegetables (zucchini, carrot, bell pepper, onion, garlic, mushrooms) and set them aside.

    Sauté for flavor: In a skillet over medium heat, heat the olive oil. Add the onion and garlic, and sauté for about 3-4 minutes until soft and fragrant.

      Combine ingredients: In the slow cooker, add the sautéed onion and garlic to the diced zucchini, carrot, bell pepper, mushrooms, crushed tomatoes, lentils, tomato paste, vegetable broth, oregano, basil, thyme, red pepper flakes (if using), salt, and pepper.

        Mix well: Stir everything together until all the ingredients are well combined.

          Slow cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors meld together.
