1 ½ cups dried green or brown lentils, rinsed and drained

4 cups vegetable broth

1 can (14.5 oz) diced tomatoes, with juice

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 tablespoon olive oil

2 teaspoons ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon turmeric

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

1 tablespoon lemon juice

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Prep the Vegetables: Begin by prepping all your vegetables. Dice the onion, carrots, and celery, and mince the garlic. Set aside.

    Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Then, add the minced garlic, carrots, and celery. Sauté for an additional 3-4 minutes until the vegetables are slightly softened.

      Combine in Slow Cooker: Transfer the sautéed mixture to the slow cooker. Add the rinsed lentils, vegetable broth, diced tomatoes, cumin, smoked paprika, cayenne pepper, turmeric, salt, and pepper. Stir to combine all the ingredients well.

        Cook the Soup: Cover the slow cooker and set it to low heat. Cook for 6-8 hours, or on high for 3-4 hours, until the lentils are tender.

          Finish with Greens: About 15 minutes before serving, stir in the chopped spinach or kale. Allow it to wilt into the soup.
