2 lbs beef chuck roast, trimmed and cut into 1-inch pieces

4 large onions, thinly sliced (about 4 cups)

4 cloves garlic, minced

2 cups beef broth

1 cup dry red wine (or additional beef broth for non-alcoholic version)

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

8 oz egg noodles

1 cup Swiss cheese, shredded

1 cup Gruyère cheese, shredded

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet over medium-high heat, add a drizzle of olive oil. Season the beef pieces with salt and pepper, then sear them in batches until browned on all sides (about 2-3 minutes per side). Transfer the seared beef to the slow cooker.

    Sauté the Onions: In the same skillet, add a bit more oil if necessary and throw in the sliced onions. Cook over medium heat, stirring occasionally, until they become caramelized and golden brown (about 15-20 minutes). Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: To the slow cooker with the beef, add the caramelized onions, beef broth, red wine, Worcestershire sauce, dried thyme, rosemary, bay leaf, and any remaining salt and pepper. Stir everything together until combined.
