Slow Cooker Chicken and Corn Chowder

1.5 lbs boneless, skinless chicken breasts

4 cups frozen corn kernels (or fresh corn, if in season)

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium potatoes, diced (about 2 cups)

2 cups chicken broth

1 cup heavy cream

1 tablespoon butter

1 teaspoon paprika

1/2 teaspoon dried thyme

1/2 teaspoon smoked paprika (optional, for a smoky flavor)

Salt and pepper to taste

Fresh parsley or chives, chopped (for garnish)

Instructions
 

Prepare the base: In the slow cooker, add the chicken breasts at the bottom. Layer the frozen or fresh corn, chopped onion, garlic, and diced potatoes over the chicken.

    Season it up: Sprinkle the paprika, dried thyme, smoked paprika, salt, and pepper over the ingredients in the slow cooker. Pour the chicken broth over all the ingredients, making sure everything is nicely submerged.
