  • 4.0 large Russet potatoes, peeled and cubed
  • 2.0 tablespoons olive oil
  • 1.0 medium onion, finely chopped
  • 3.0 cloves garlic, minced
  • 1.0 cup grated sharp cheddar cheese
  • 1.0 cup grated Irish cheddar cheese
  • 0.5 cup heavy cream
  • 0.5 cup chicken or vegetable broth
  • 1.0 teaspoon dried thyme
  • 1.0 teaspoon smoked paprika
  • 0.0 to taste salt and pepper
  • 0.25 cup fresh chives, chopped

Instructions
 

  • Prepare the Potatoes: Boil the cubed potatoes in a pot of salted water for about 10-12 minutes, or until fork-tender. Drain well and set aside.
  • Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 4-5 minutes, until soft and translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Combine Ingredients: Lower the heat to medium-low, then add the boiled potatoes to the skillet. Gently toss them with the onions and garlic. Pour in the heavy cream and chicken or vegetable broth.
  • Add Seasonings: Sprinkle in the dried thyme, smoked paprika, salt, and pepper. Stir everything well, ensuring the potatoes are evenly coated with the creamy mixture.
  • Melt the Cheeses: Gradually add the sharp cheddar and Irish cheddar, stirring continuously until all the cheese melts and creates a gooey, cheesy coating over the potatoes.
  • Finish in Skillet: Let the mixture cook on medium-low for 5-7 minutes, allowing the flavors to meld together and the dish to thicken slightly. Adjust the seasoning to taste.
  • Garnish & Serve: Once ready, remove the skillet from heat, sprinkle chopped chives over the top, and serve immediately hot.
