2 medium zucchinis, thinly sliced

1 cup shredded cheese (cheddar, mozzarella, or a mix)

4 large flour tortillas

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional toppings: sour cream, salsa, guacamole, fresh cilantro

Instructions
 

Prep the Zucchini: In a large bowl, toss the thinly sliced zucchinis with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well coated.

    Cook the Zucchini: Heat a skillet over medium heat. Add the seasoned zucchini slices and sauté for about 5-7 minutes or until tender and slightly browned. Remove from heat and set aside.

      Assemble the Quesadillas: On a clean surface or cutting board, lay out one flour tortilla. Sprinkle half of the tortilla with a generous amount of shredded cheese, followed by half of the sautéed zucchini. Top with a bit more cheese (to help the quesadilla stick together), and fold the tortilla over to form a half-moon shape. Repeat for the second quesadilla.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip and cook for an additional 3-4 minutes on the other side until the cheese is melted and the tortilla is golden.

          Slice and Serve: Once cooked, remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve with your choice of toppings such as sour cream, salsa, guacamole, or fresh cilantro.
