1 cup fig jam (store-bought or homemade)

4 large flour tortillas

1 cup goat cheese, crumbled

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (optional)

Pinch of salt and pepper

Honey or balsamic glaze for drizzling (optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the crumbled goat cheese, shredded mozzarella, fresh thyme (if using), and a pinch of salt and pepper. Mix well to create a cheesy filling.

    Assemble the Quesadillas: Lay out two tortillas on a clean surface. Spread around 1/4 cup of fig jam on each tortilla. Next, evenly distribute the cheese mixture over the fig jam, and top with the remaining two tortillas to form two quesadillas.

      Heat the Pan: Heat the olive oil in a large skillet over medium heat. Once hot, carefully place one quesadilla in the pan.

        Cook the Quesadilla: Cook the quesadilla for about 3-4 minutes until the bottom is golden and the cheese starts to melt. Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes on the other side until golden and crispy.

          Repeat: Remove the cooked quesadilla from the pan and place it on a cutting board. Cut into wedges. Repeat the process with the second quesadilla.
