Ingredients

2 cups fresh blueberries (plus extra for garnish)

2 tablespoons granulated sugar (adjust based on sweetness preference)

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 cup heavy cream

1 cup mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Blueberry Compote:

In a small saucepan over medium heat, combine the blueberries, granulated sugar, lemon juice, and lemon zest. Cook for about 10 minutes, stirring occasionally until the blueberries start to burst and form a thick sauce. Remove from heat and let it cool completely.

      Whip the Cream:

In a large mixing bowl, pour the heavy cream. Using an electric mixer, whip the cream on medium-high speed until soft peaks form. Be careful not to over-whip, as you want it to be silky.

          Combine Mascarpone:

In another bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

              Fold the Mixtures Together:

Gently fold the whipped cream into the mascarpone mixture. Start with a third of the whipped cream to lighten the mascarpone, then carefully fold in the rest until well combined but still fluffy.

                  Layer the Fool:

In serving glasses or bowls, spoon in a layer of the blueberry compote at the bottom, followed by a layer of the mascarpone cream mixture. Repeat the layers until the glasses are filled, finishing with the mascarpone on top.

                      Chill and Serve:

Cover the glasses with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the dessert to set. Just before serving, garnish with a few fresh blueberries, a mint leaf, and extra lemon zest if desired.
