2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

2 tablespoons loose Earl Grey tea leaves (or 2-3 tea bags)

2 teaspoons vanilla extract

1 packet (2 1/4 teaspoons) powdered gelatin

3 tablespoons cold water

A pinch of salt

Fresh berries and mint leaves for garnish (optional)

Instructions
 

Infuse the Cream: In a medium saucepan, combine the heavy cream, whole milk, sugar, and a pinch of salt. Over medium heat, bring the mixture to just under a simmer, stirring occasionally. Once hot, remove from heat and add the Earl Grey tea leaves (or tea bags). Allow to steep for about 10-15 minutes, depending on your desired strength.

    Strain the Mixture: After steeping, strain the cream mixture through a fine-mesh sieve into a bowl, discarding the tea leaves or removing the tea bags. Stir in the vanilla extract.

      Prepare the Gelatin: In a small bowl, sprinkle the powdered gelatin over cold water and let it sit for about 5 minutes to bloom (the gelatin will absorb the water and become firm).

        Combine Gelatin with Cream: After blooming, gently heat the gelatin in the microwave for about 10-15 seconds until it dissolves (do not let it boil). Gradually whisk the dissolved gelatin into the warm cream mixture until completely combined.

          Pour and Chill: Pour the panna cotta mixture into individual serving cups or ramekins. Let them cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours, or until set.

            Serve: Once set, gently run a knife around the edges of each panna cotta if serving from a mold. To unmold, dip the bottom of the ramekin in warm water for a few seconds. Serve chilled, garnished with fresh berries and mint leaves for a refreshing touch.
