4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium-sized bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, olive oil, dried oregano, salt, black pepper, and red pepper flakes (if using). Mix well until all ingredients are thoroughly combined.

      Prepare the Chicken: Carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through. Season the exterior of the chicken with additional salt and pepper.

        Stuff the Chicken: Generously stuff each chicken pocket with the spinach and feta mixture. Use toothpicks or kitchen twine to secure the openings, ensuring that the filling does not spill out during cooking.

          Sear the Chicken: In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 4-5 minutes on each side until golden brown.

            Top with Parmesan: Once the chicken is seared, sprinkle the tops with grated Parmesan cheese.

              Transfer to the Oven: Place the skillet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                Rest and Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes before removing the toothpicks or twine. Slice and serve warm, garnished with fresh herbs if desired.
