Savory Sausage and Mushroom Hand Pies

1 lb pork sausage (or your choice of sausage)

8 oz cremini mushrooms, finely chopped

1 small onion, diced

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

1 cup shredded sharp cheddar cheese

1/4 cup fresh parsley, chopped

2 sheets of puff pastry, thawed

1 egg, beaten (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Cook the Sausage: In a large skillet over medium heat, add the pork sausage. Cook until browned and crumbly, about 5-7 minutes. Drain excess fat and set aside.

      Sauté Vegetables: In the same skillet, add olive oil. Once hot, toss in the diced onion and sauté for about 3-4 minutes until soft. Add the minced garlic and cook for another minute, stirring frequently.

        Add Mushrooms and Herbs: Stir in the chopped cremini mushrooms and cook until they're soft and any liquid has evaporated, about 5 minutes. Add thyme, oregano, salt, and pepper, mixing well.

          Combine Filling: Remove the skillet from heat, and add the cooked sausage, shredded cheddar cheese, and chopped parsley to the skillet. Mix until everything is well combined. Let the mixture cool slightly.

            Prepare the Pastry: Unroll the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares, making a total of 8 squares.

              Assemble the Hand Pies: Spoon a generous amount of the sausage and mushroom filling onto one half of each pastry square, leaving a small border around the edges. Fold the other half of the pastry over to seal. Use a fork to crimp the edges and seal tightly.

                Brush with Egg Wash: Place the hand pies on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.

                  Bake: Bake in the preheated oven for 20-25 minutes, or until they are puffed and golden brown.
