1 cup Arborio rice

1 small onion, finely chopped

3 cloves garlic, minced

2 cups pumpkin puree (fresh or canned)

2 cups vegetable broth

1 cup sliced mushrooms (cremini or portobello)

1/2 cup dry white wine

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large saucepan, heat the olive oil and butter over medium heat. Add the chopped onion and cook for about 3-4 minutes until translucent. Then add the minced garlic and sliced mushrooms, and sauté for another 5 minutes until the mushrooms are tender and browned.

    Toast the Rice: Add the Arborio rice to the pan and stir for 1-2 minutes, allowing the rice to absorb the flavors and toast lightly.

      Deglaze with Wine: Pour in the dry white wine, stirring continuously until it is mostly absorbed by the rice. This will take about 2-3 minutes.

        Add Broth Gradually: Begin adding the vegetable broth, one ladle at a time, to the rice mixture. Stir frequently and allow each addition of broth to be absorbed before adding the next. This process will take around 18-20 minutes.

          Incorporate Pumpkin: Once the rice is al dente and creamy, stir in the pumpkin puree and thyme. Cook for an additional 2 minutes to heat through.

            Finish with Cheese: Remove from heat and mix in the grated Parmesan cheese. Season with salt and pepper to taste.
