3-4 tablespoons ice water

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, based on preference)

3 cups kale, stems removed and chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1/2 cup shredded mozzarella cheese

1 egg (for egg wash)

Freshly grated Parmesan cheese (for serving)

Instructions
 

Make the Dough:

    - In a mixing bowl, combine the flour, salt, and black pepper. Add the chilled butter and mix until crumbly.

      - Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

        Prepare the Filling:

          - In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

            - Add the Italian sausage to the skillet, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

              - Stir in the garlic, chopped kale, oregano, and red pepper flakes (if using). Cook until the kale is wilted, about 3-4 minutes. Remove from heat and let cool slightly.

                Assemble the Galette:

                  - Preheat your oven to 400°F (200°C).

                    - On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer the dough to a parchment-lined baking sheet.
