Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, cold and cubed

1 cup sharp cheddar cheese, shredded

1 cup cooked bacon, crumbled (about 8 strips)

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional, for garnish)

Instructions

Preheat the Oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

Incorporate Butter: Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs, with some pea-sized pieces remaining.

Add Cheese and Bacon: Stir in the shredded cheddar cheese and crumbled bacon, ensuring they are evenly distributed throughout the flour mixture.

Add Buttermilk: Make a well in the center of the dry ingredients and pour in the buttermilk. Stir gently with a wooden spoon until just combined—do not overmix!

Shape the Biscuits: Transfer the dough onto a floured surface and gently pat it into a rectangle about 1-inch thick. Using a biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet. Gather scraps, gently knead, and cut out more biscuits.

Bake: Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown.

Cool and Serve: Allow the biscuits to cool slightly on the baking sheet for about 5 minutes. Optionally, garnish with fresh chives before serving warm.
