Sautéed Garlic Mushroom & White Bean Tostadas

8 corn tostadas

2 cups mushrooms (cremini or button), sliced

1 cup canned white beans (cannellini or navy), drained and rinsed

4 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon smoked paprika

1 teaspoon ground cumin

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Lime wedges (for serving)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they become translucent.

    Add Garlic and Mushrooms: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Then, add the sliced mushrooms to the skillet and sauté until they're browned and tender, about 6-7 minutes. Stir occasionally to ensure even cooking.

      Season the Mixture: Sprinkle in the smoked paprika and ground cumin, and mix well to incorporate. Season with salt and pepper to taste.

        Incorporate White Beans: Add the drained white beans to the skillet. Gently stir them through the mushroom mixture and cook for another 3-5 minutes until everything is heated through, and the beans are slightly softened. Adjust seasoning if needed.

          Prepare Tostadas: While the mushroom and bean mixture is heating, you can prepare the corn tostadas. Warm them in the oven at 350°F (175°C) for about 5-7 minutes or until crispy.
