Ingredients

1 lb fresh salmon fillet, skinless

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 head of romaine lettuce, leaves separated and washed

1/2 cup shredded carrots

1/2 cup cucumber, finely diced

1/4 cup fresh cilantro, chopped (optional)

Lime wedges, for serving

Instructions

Prepare the Salmon: Preheat your oven to 400°F (200°C). Place the salmon fillet on a lined baking sheet. Drizzle with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Bake for about 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

Make the Lemon Glaze: In a small saucepan over medium heat, combine the soy sauce, honey (or maple syrup), fresh lemon juice, and lemon zest. Bring to a simmer and let it reduce for 4-5 minutes until slightly thickened. Remove from heat and set aside.

Shred the Salmon: Once the salmon is cooked, remove it from the oven and let it cool for a minute. Use a fork to break it apart into bite-sized pieces.

Assemble the Wraps: Take a romaine lettuce leaf and place a spoonful of shredded salmon in the center. Top with shredded carrots, diced cucumber, and a drizzle of the lemon glaze.

Garnish and Serve: Optionally, sprinkle with fresh cilantro for added flavor. Serve with lime wedges on the side for an extra zing.

Enjoy: Roll up or fold the lettuce leaf around the fillings and enjoy your refreshing salmon lettuce wraps!
