Ingredients
  

1 cup quinoa (cooked and cooled)

1 cup cherry tomatoes (halved)

1 cup cucumber (diced)

1 cup shredded carrots

1 cup red cabbage (shredded)

1 cup chickpeas (rinsed and drained)

1 avocado (diced)

½ cup feta cheese (crumbled)

¼ cup fresh parsley (chopped)

¼ cup olive oil

3 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Optional: toasted nuts/seeds for added crunch

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper. Set aside.

    Layer the Salad Jars: Using 4 mason jars, start by adding the dressing to the bottom of each jar (about 1 tablespoon per jar). This will prevent the salad from getting soggy.

      Add Base Ingredients: Layer in the base ingredients in this order:

        - Quinoa

          - Chickpeas

            - Cucumber

              - Cherry tomatoes

                Add Colorful Veggies: Next, add:

                  - Shredded carrots

                    - Red cabbage

                      Top with Fresh Ingredients: Finally, add:

                        - Diced avocado

                          - Crumbled feta cheese

                            - Chopped parsley

                              Seal and Store: Close each jar tightly with a lid. These salad jars can be stored in the refrigerator for up to 5 days.

                                Serving: When ready to eat, shake the jar to mix the dressing with the ingredients. Pour into a bowl or enjoy straight from the jar!
