Ingredients

2 cups of fresh broccoli florets

1 can (15 oz) of white beans (such as cannellini or navy beans), drained and rinsed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

1 cup cooked quinoa (or brown rice)

½ cup cherry tomatoes, halved

¼ cup crumbled feta cheese (optional)

Fresh lemon juice, to taste

Fresh parsley, chopped for garnish

Instructions

Preheat oven: Preheat your oven to 425°F (220°C).

Prepare broccoli: In a large mixing bowl, combine the broccoli florets, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the broccoli is evenly coated with the seasoning.

Roast broccoli: Spread the seasoned broccoli on a baking sheet in a single layer. Roast in the preheated oven for about 15 minutes, or until the edges are crispy and the broccoli is tender.

Warm the beans: While the broccoli is roasting, in a small pot over medium heat, add the drained white beans with a splash of water or vegetable broth. Warm the beans for about 5-7 minutes, stirring occasionally until heated through. Season with salt and pepper to taste.

Assemble the bowls: In each serving bowl, start with a base of cooked quinoa (or brown rice). Top with the roasted broccoli, warm white beans, and halved cherry tomatoes.

Add cheese and lemon: If desired, sprinkle crumbled feta cheese over the top. Drizzle with fresh lemon juice for brightness.

Garnish: Finally, garnish with fresh chopped parsley before serving.

Enjoy your vibrant and nourishing Roasted Broccoli and White Bean Bowl!
