Melt the Chocolate: In a medium-sized heatproof bowl, combine the finely chopped dark chocolate and a pinch of salt. In a saucepan over medium heat, bring the heavy cream to a simmer. Once simmering, pour it over the chocolate and allow it to sit for 2-3 minutes to soften.
