8 oz (about 2 cups) tri-color pasta (fusilli or rotini works best)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (red, yellow, and green), diced

1 cup shredded carrots

1 cup sweet corn (canned or frozen)

1/2 cup red onion, finely chopped

1 cup mozzarella balls (bocconcini) or diced mozzarella

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/2 cup black olives, sliced (optional)

1/2 cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Optional garnish: Grated parmesan cheese and extra fresh herbs

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the tri-color pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Veggies: While the pasta cools, prepare the vegetables. Dice the cucumber, bell peppers, and red onion. Halve the cherry tomatoes, and shred the carrots if not using pre-packaged shredded carrots.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell peppers, carrots, sweet corn, red onion, mozzarella balls, parsley, basil, and black olives (if using).

        Add Dressing: Drizzle the Italian dressing over the pasta and veggie mixture. Toss gently until everything is evenly coated. Season with salt and pepper to taste.

          Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Give it a good toss before serving, and garnish with grated parmesan cheese and extra fresh herbs, if desired.
