Ingredients

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, diced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

8 small corn or flour tortillas

1 cup red cabbage, shredded

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: hot sauce for serving

Instructions

Marinate the Shrimp: In a medium bowl, combine the shrimp, diced pineapple, olive oil, chili powder, garlic powder, cumin, salt, and pepper. Toss until the shrimp are well coated. Let marinate for at least 10 minutes while you prepare the grill.

Preheat the Grill: Heat your grill to medium-high heat. If using skewers, thread the marinated shrimp and pineapple onto the skewers for easy handling.

Grill the Shrimp and Pineapple: Place the shrimp and pineapple skewers on the grill. Grill for about 2-3 minutes per side, or until the shrimp are pink and opaque, and the pineapple has nice grill marks. This should take around 6-8 minutes in total.

Warm the Tortillas: While the shrimp are grilling, warm the tortillas on the grill for about 30 seconds on each side, or until they are pliable and slightly toasted.

Assemble the Tacos: Once the shrimp and pineapple are done, remove them from the grill. In each tortilla, layer a handful of shredded red cabbage, grilled shrimp, and pineapple. Top with sliced avocado and chopped cilantro.

Serve: Squeeze fresh lime juice over the tacos, add hot sauce if desired, and enjoy your fresh and flavorful creation!
