Quick Grilled Peach Flatbreads

Ingredients
  

4 store-bought or homemade flatbreads

2 ripe peaches, sliced

2 tablespoons olive oil

1 cup fresh mozzarella cheese, sliced or torn

1/2 cup crumbled goat cheese

1/4 cup fresh basil leaves

1 tablespoon balsamic glaze (optional)

Salt and pepper to taste

Instructions
 

Preheat the Grill: Heat your grill to medium-high. If using a grill pan, heat it over medium heat on the stovetop.

    Prepare the Peaches: In a small bowl, mix the sliced peaches with 1 tablespoon of olive oil, salt, and pepper. Toss gently to coat.

      Grill the Peaches: Place the peach slices directly on the grill grates and cook for about 2-3 minutes per side, until they are slightly caramelized and have nice grill marks. Remove from the grill and set aside.

        Prepare the Flatbreads: Brush each flatbread lightly with the remaining olive oil on one side. This will help them crisp up on the grill.

          Assemble & Grill: Place the flatbreads (oiled side down) on the grill. Top each flatbread evenly with fresh mozzarella, crumbled goat cheese, and the grilled peaches.

            Cook the Flatbreads: Close the grill lid and cook for 4-5 minutes, or until the cheese is melted and the flatbreads are crisp. Check occasionally to prevent burning.

              Finish & Serve: Once done, remove the flatbreads from the grill. Top with fresh basil leaves and drizzle with balsamic glaze if desired. Slice and serve immediately.
