Ingredients
  

2 cups masa harina (corn flour)

1 1/4 cups warm water

1/2 teaspoon salt

1 cup shredded mozzarella cheese (or a cheese of your choice)

1/2 cup refried black beans (or pinto beans)

1/4 cup finely chopped cilantro

1 teaspoon ground cumin

1/2 teaspoon garlic powder

Cooking oil for frying (e.g., vegetable oil)

Instructions
 

Prepare the Dough: In a mixing bowl, combine the masa harina and salt. Gradually add the warm water, mixing with your hands or a wooden spoon until the dough comes together. It should be pliable and not sticky. If it's too dry, add a bit more water; if too wet, add a sprinkle more of masa harina.

    Make the Filling: In a separate bowl, mix the shredded cheese, refried beans, chopped cilantro, ground cumin, and garlic powder. Stir until well combined.

      Form the Pupusas: Divide the dough into 8 equal pieces and roll each piece into a ball. Flatten each ball into a disk about 1/4 inch thick. Place a spoonful of the cheese and bean mixture in the center of the disk. Carefully fold the edges of the disk around the filling to encase it, then gently flatten it again into a disk, making sure not to break the dough.

        Cook the Pupusas: Heat a skillet over medium heat and add a small amount of cooking oil. Once the oil is hot, place one pupusa in the pan. Cook for about 3-4 minutes on each side, or until golden brown and slightly crispy. Repeat with the remaining pupusas, adding more oil to the skillet as needed.

          Serve: Serve the pupusas warm, topped with your favorite toppings such as curtido (cabbage slaw) and salsa. Enjoy!
