Ingredients

For the Pumpkin Layer:

1 cup canned pumpkin puree

1/2 cup brown sugar

1/4 cup granulated sugar

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

For the Yogurt Layer:

1 cup plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

Instructions

Preheat Your Oven: Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Prepare the Pumpkin Mixture: In a large mixing bowl, combine the canned pumpkin puree, brown sugar, and granulated sugar. Add the vegetable oil, eggs, and vanilla extract. Mix until smooth and well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

Mix Together: Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Avoid over-mixing.

Prepare the Yogurt Layer: In another bowl, mix the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt until smooth and creamy.

Layer the Mixtures: Pour half of the pumpkin batter into the prepared baking pan, spreading it evenly. Next, dollop large spoonfuls of the yogurt mixture over the pumpkin layer. Use a spatula or a knife to gently swirl the yogurt into the pumpkin batter. Finally, pour the remaining pumpkin batter on top and repeat the swirling process to create a marbled effect.

Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. The bars should be set but still moist.

Cool and Slice: Once baked, remove the pan from the oven and allow it to cool completely in the pan on a wire rack. Once cool, lift the bars out using the parchment overhang, and slice them into squares or rectangles.

Serve and Enjoy: These pumpkin yogurt swirl bars can be served warm or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to a week.
