Ingredients

1 cup rolled oats

1/2 cup pumpkin puree (canned or fresh)

1/3 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup ground flaxseed

1 teaspoon pumpkin pie spice

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup mini chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground flaxseed, pumpkin pie spice, and salt. Stir together until evenly mixed.

Mix Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract until smooth and well incorporated.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix thoroughly. If using, fold in the mini chocolate chips and chopped nuts at this stage for added texture and flavor.

Form the Balls: Once the mixture is well combined and sticky, use your hands to form small balls, about 1 inch in diameter. If the mixture feels too sticky, wet your hands slightly with water to help roll the balls.

Chill: Place the energy balls on a parchment-lined baking tray or a plate and refrigerate for at least 30 minutes to firm up.

Serve and Store: Enjoy your energy balls as a quick snack or post-workout treat! Store any leftovers in an airtight container in the fridge for up to a week.
