1 tablespoon brown sugar

1/4 teaspoon ground ginger

1/2 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter (plus more for cooking)

1/2 cup cream cheese, softened

2 tablespoons maple syrup (plus extra for serving)

Optional toppings: chopped pecans, whipped cream, or additional maple syrup

Instructions
 

Prepare the Batter:

    In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      Mix Wet Ingredients:

        In a separate bowl, beat the buttermilk, pumpkin puree, egg, and melted butter until smooth.

          Combine:

            Pour the wet ingredients into the dry mixture and stir gently until just combined. Be careful not to overmix; a few lumps are fine.

              Cook the Pancakes:

                Heat a non-stick skillet or griddle over medium heat and add a little butter to coat the surface. Pour about 1/4 cup of batter for each pancake onto the hot skillet.
