2 cups rolled oats

1 cup pumpkin seeds

1/2 cup chopped walnuts (or any nuts of your choice)

1/2 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/2 cup pumpkin puree

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin seeds, walnuts, shredded coconut, cinnamon, nutmeg, ginger, and salt. Stir well to incorporate all the dry ingredients evenly.

      Prepare Wet Mixture: In a separate bowl, whisk together the honey (or maple syrup), pumpkin puree, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture over the dry ingredients. Use a spatula or wooden spoon to mix thoroughly until all dry ingredients are evenly coated.

          Form Clusters: Spread the mixture evenly onto the prepared baking sheet. Use your hands to press it down gently, forming clusters. Leave some areas loose for crunchy bits.
