Pumpkin Gnocchi with Brown Butter Sauce

2 cups pumpkin puree (preferably homemade or canned)

1 cup ricotta cheese (well-drained)

1 large egg

1 teaspoon salt

1 teaspoon ground nutmeg

2 to 3 cups all-purpose flour (plus extra for dusting)

For the Brown Butter Sauce:

1/2 cup unsalted butter

1/4 cup fresh sage leaves

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Toasted pumpkin seeds (for garnish, optional)

In a large mixing bowl, combine the pumpkin puree, ricotta cheese, egg, salt, and ground nutmeg. Mix until smooth and well combined.

    Gradually add the flour, starting with 2 cups and mixing gently until a soft dough forms. You may need to add more flour, 1 tablespoon at a time, until the dough is not too sticky but still soft.

      Divide the dough into 4 equal portions. On a lightly floured surface, roll each portion into a long rope, about 1/2 inch in diameter. Cut the rope into 1-inch pieces.

        To shape the gnocchi, you can either press each piece with a fork or use a gnocchi board for texture. Dust lightly with flour to prevent sticking.

          Bring a large pot of salted water to a gentle boil. Carefully drop the gnocchi into the water in batches. They are done when they float to the surface, usually within 2-3 minutes. Use a slotted spoon to remove them and transfer to a plate. Keep warm.

            In a large skillet, melt the unsalted butter over medium heat. Add the fresh sage leaves and cook, stirring frequently, until the butter turns golden brown and has a nutty aroma, about 3-5 minutes. Be careful not to burn the butter.

              Gently add the cooked gnocchi to the skillet and toss to coat them in the brown butter sauce. Season with salt and pepper to taste.
