Ingredients

1 loaf of thick-cut bread (including challah or brioche)

1 cup canned pumpkin puree

4 large eggs

1 cup milk (or a non-dairy alternative)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground clove

1 tablespoon brown sugar (optional, for added sweetness)

Pinch of salt

2 tablespoons butter (for cooking)

Maple syrup (for serving)

Powdered sugar (for dusting, optional)

Instructions

Prepare the Batter: In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, cinnamon, nutmeg, ginger, clove, brown sugar, and salt until well combined and smooth.

Cut the Bread: Slice the thick-cut bread into finger-sized sticks (approximately 1 inch wide and 3-4 inches long). This will help create the perfect shape for dipping.

Soak the Bread: Heat a large non-stick skillet or griddle over medium heat. Dip each bread stick into the pumpkin mixture, ensuring they are fully coated but not overly soggy. Allow excess batter to drip off before placing them on the skillet.

Cook the French Toast Sticks: Melt 1 tablespoon of butter in the heated skillet. Once melted, carefully place a batch of soaked bread sticks onto the skillet, making sure they are not overlapping. Cook for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes on the other side.

Keep Warm: Remove the cooked French toast sticks from the skillet and place them on a plate. You may keep them warm in a low oven (around 200°F or 90°C) while you cook the remaining sticks. Add more butter to the skillet as needed, repeating the process until all sticks are cooked.

Serve: Once all the French toast sticks are cooked, serve warm with a dusting of powdered sugar, a drizzle of maple syrup, and perhaps a sprinkle of extra cinnamon if desired. Enjoy your delicious Pumpkin Spice French Toast Sticks!
