1 ripe banana, mashed

1 cup canned pumpkin puree

1/4 cup honey or maple syrup

1/3 cup unsweetened applesauce

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 cup whole wheat flour (or gluten-free flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the mashed banana, pumpkin puree, honey (or maple syrup), applesauce, melted coconut oil, and vanilla extract. Whisk until smooth and well combined.

      In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

        Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

          If desired, fold in the chopped nuts and dark chocolate chips to add texture and flavor.

            Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

              Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
