Pineapple Mint Agua Fresca

4 cups fresh pineapple, peeled and chopped

1/2 cup fresh mint leaves, loosely packed

2-3 tablespoons lime juice (about 1 lime)

3-4 cups cold water (adjust based on desired thickness)

2-4 tablespoons agave syrup or honey (to taste)

Ice cubes

Mint sprigs and pineapple slices for garnish (optional)

Instructions
 

Blend the Pineapple: In a blender, combine the chopped pineapple and 3 cups of cold water. Blend until smooth and well combined, about 30-60 seconds.

    Strain: Pour the blended pineapple mixture through a fine mesh strainer or cheesecloth into a large pitcher to separate the juice from the pulp. Use a spoon to press the pulp to extract as much juice as possible.

      Add Mint: Add the fresh mint leaves and lime juice to the strained pineapple juice. Blend again for about 10-15 seconds until the mint is finely chopped and incorporated into the mixture.

        Sweeten: Taste the agua fresca and add agave syrup or honey to your desired sweetness. Start with 2 tablespoons and add more if you prefer it sweeter. Blend once more to incorporate the sweetener.

          Adjust Consistency: If the agua fresca is too thick for your liking, gradually add the remaining cold water until you reach your preferred consistency.

            Serve: Fill glasses with ice cubes and pour the pineapple mint agua fresca over the ice. Garnish with mint sprigs and pineapple slices if desired.
