Pineapple Chicken Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 cup boneless chicken breast, diced

1 cup fresh pineapple, diced

1/2 cup frozen peas and carrots mix

1/2 cup red bell pepper, finely chopped

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro or basil for garnish (optional)

Lime wedges for serving

Instructions
 

Prepare the Rice: If using fresh rice, spread it out on a baking sheet and let it cool to remove excess moisture. This helps keep the grains separate during frying.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the diced chicken, season with salt and pepper, and stir-fry for about 5-7 minutes, until cooked through and lightly browned. Remove the chicken from the pan and set aside.

      Sauté Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic and white parts of the green onions, cooking for about 30 seconds until fragrant. Then, add the red bell pepper and the frozen peas and carrots mix. Stir-fry for another 3-4 minutes until the vegetables are tender.

        Add Pineapple & Chicken: Stir in the diced pineapple and cooked chicken, mixing well. Allow to cook for an additional 2 minutes to heat everything through.

          Incorporate Rice: Add the cooked jasmine rice to the mixture. Use a spatula to break up any clumps and thoroughly combine with the chicken, vegetables, and pineapple.

            Season the Fried Rice: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir-fry everything together for about 3-4 minutes until the rice is heated through, and all ingredients are well combined. Taste and adjust seasoning with salt and pepper as necessary.

              Garnish & Serve: Turn off the heat, sprinkle with the green parts of the chopped green onions, and gently toss. Serve hot, garnished with fresh cilantro or basil and lime wedges on the side.
