1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Fresh basil leaves (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into 1/4-inch thick rounds for even cooking.

Season the Sweet Potato Rounds: In a large bowl, toss the sweet potato rounds with olive oil, garlic powder, sea salt, and black pepper until they are evenly coated.

Bake the Sweet Potato Rounds: Arrange the seasoned sweet potato rounds on the prepared baking sheet in a single layer. Bake for 25 minutes, or until they are tender and starting to brown slightly.

Add Pesto and Parmesan: Remove the baking sheet from the oven. Using a spoon, spread a small amount of pesto on each sweet potato round. Top generously with grated Parmesan cheese.

Final Bake: Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is melted and golden brown.
