Pesto Chicken Stuffed Avocados

2 ripe avocados

1 cup cooked chicken, shredded (you can use rotisserie chicken for convenience)

1/2 cup homemade or store-bought pesto

1/4 cup cherry tomatoes, halved

1/4 cup mozzarella cheese, shredded

2 tablespoons pine nuts, toasted

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh basil leaves, for garnish

Prep the Avocados: Cut the avocados in half and remove the pits. Carefully scoop out a little of the flesh to create a larger cavity for the filling, and set the scooped flesh aside.

    Make the Filling: In a mixing bowl, combine the shredded chicken, pesto, halved cherry tomatoes, shredded mozzarella, lemon juice, and the reserved avocado flesh. Season with salt and pepper to taste. Stir until all ingredients are well coated.

      Stuff the Avocados: Generously spoon the pesto chicken mixture into each avocado half until filled. You can really pile it up for a hearty portion!

        Toast the Pine Nuts: In a small dry skillet over medium heat, add the pine nuts. Toast for about 2-3 minutes, stirring frequently, until they are golden brown and fragrant. Be careful not to burn them!
