Ingredients

4 ripe pears, peeled, cored, and sliced

2 cups fresh raspberries

3/4 cup granulated sugar, divided

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 cup all-purpose flour

1/2 cup rolled oats

1 teaspoon baking powder

1/4 teaspoon salt

6 tablespoons unsalted butter, melted

1/2 cup buttermilk

1/2 teaspoon almond extract (optional)

Vanilla ice cream or whipped cream for serving (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a 9x13-inch baking dish or a similar-sized oven-proof dish.

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced pears and fresh raspberries. Add 1/2 cup of the granulated sugar, lemon juice, vanilla extract, and cinnamon. Gently toss until the fruit is well-coated. Pour the fruit mixture into the prepared baking dish, spreading it evenly.

Make the Cobbler Topping: In another bowl, whisk together flour, oats, baking powder, salt, and the remaining 1/4 cup of sugar. Then, add the melted butter, buttermilk, and almond extract (if using). Stir until just combined; be careful not to overmix.

Assemble the Cobbler: Using a spoon or a scoop, dollop the cobbler topping evenly over the fruit filling. It's okay if some fruit peeks through; it will create a lovely contrast during baking.

Bake: Place the cobbler in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

Cool: Once baked, remove the cobbler from the oven and let it cool for about 10-15 minutes. This cooling time helps the filling set a bit.

Serve: Serve the warm cobbler plain or with a generous scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
