Peach Yogurt Popsicles

Ingredients
  

3 ripe peaches, pitted and chopped

1/2 cup honey or maple syrup (adjust sweetness as desired)

1 1/2 cups Greek yogurt (plain or vanilla)

1/2 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Peaches: In a blender or food processor, puree the chopped peaches until smooth. If you prefer some texture, you can pulse them a few times until chunky rather than completely smooth.

    Sweeten the Mixture: Add honey (or maple syrup), lemon juice, and a pinch of salt to your peach puree. Blend for another 30 seconds to combine well. Taste the mixture and adjust sweetness if needed.

      Mix the Yogurt: In a separate bowl, combine the Greek yogurt and vanilla extract until smooth and creamy.

        Layer the Mixture: Start pouring a layer of the peach puree into the bottom of your popsicle molds, filling them about one-third full. Follow this with a layer of the yogurt mixture, filling them another third of the way, and top off with more peach puree.

          Insert Sticks: If your popsicle molds have sticks, insert them now. If they don't, you can wait until the popsicles freeze for about an hour, then insert wooden sticks into the partially frozen pops.

            Freeze: Place the molds in the freezer for at least 4-6 hours or until completely solid.

              Unmold and Serve: To release the popsicles, run warm water over the outside of the mold for a few seconds, then gently pull the pops out. Serve immediately, garnished with fresh mint leaves if desired.
