2 ripe peaches, sliced

1 tablespoon olive oil

1 red bell pepper, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon rice vinegar

1 cup fresh basil leaves, loosely packed

Salt and pepper to taste

Cooked jasmine or brown rice, for serving

Toasted sesame seeds, for garnish

Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey, and rice vinegar. Set aside.

    Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat until shimmering.

      Sauté the Aromatics: Add the minced garlic and grated ginger to the hot oil, stirring constantly for about 30 seconds until fragrant.
