1/4 cup chia seeds

1 cup almond milk (or your preferred milk)

1 tablespoon honey or maple syrup (adjust for sweetness)

1/2 cup raspberries (fresh or frozen)

Toasted almonds or granola (for topping)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Chia Pudding:

    - In a medium-sized bowl, combine the chia seeds, almond milk, honey or maple syrup, and vanilla extract.

      - Whisk the mixture well until the chia seeds are evenly distributed in the liquid.

        Refrigerate:

          - Cover the bowl with plastic wrap or transfer the mixture to a mason jar, and refrigerate for at least 4 hours or overnight, until the mixture thickens to a pudding-like consistency.

            Prepare the Fruit:

              - While the chia pudding is setting, rinse the raspberries and slice the peach into thin wedges. If you’re using frozen raspberries, you can slightly thaw them by placing them in a bowl at room temperature.

                Assemble the Pudding:

                  - Once the chia pudding has thickened, give it a good stir. Layer a serving glass or bowl with a portion of the chia pudding, followed by a layer of diced peaches and a layer of raspberries. Repeat the layers until all ingredients are used, finishing with chia pudding on top.

                    Garnish:
