Peach Honey Flatbread

Ingredients
  

1 cup of warm water (110°F)

2 teaspoons active dry yeast

2 tablespoons honey

2 cups all-purpose flour (plus extra for dusting)

1 teaspoon salt

2 tablespoons olive oil (plus more for brushing)

2 ripe peaches, sliced thinly

½ cup ricotta cheese

¼ cup goat cheese, crumbled

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

2 tablespoons balsamic glaze

Fresh arugula (for topping, optional)

Instructions
 

Activate the Yeast: In a small bowl, combine warm water, active dry yeast, and honey. Let it sit for about 5 minutes until bubbly and frothy.

    Make the Dough: In a large bowl, mix together the flour and salt. Create a well in the center and pour in the activated yeast mixture and olive oil. Stir until a dough begins to form.

      Knead the Dough: Lightly flour your countertop and knead the dough for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for 1 hour or until it has doubled in size.

        Preheat the Oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up as well.

          Prepare the Flatbread: Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a flat oval or rectangle shape, about ¼ inch thick.

            Assemble the Flatbread: Place the rolled-out dough onto a parchment-lined baking sheet or a preheated pizza stone. Brush lightly with olive oil. Spread half of the ricotta cheese over each flatbread, leaving a small border around the edges. Layer the sliced peaches evenly over the cheese and sprinkle with crumbled goat cheese and fresh thyme.

              Bake: Transfer the flatbread to the oven and bake for 10-12 minutes, or until the edges are golden and the cheese is bubbly.

                Finish and Serve: Once out of the oven, drizzle the flatbread with balsamic glaze and top with fresh arugula if desired. Slice into pieces and serve warm.
