Ingredients

1 cup rolled oats

1 ½ cups unsweetened almond milk (or any milk of choice)

1 medium ripe peach, diced (reserve a few slices for topping)

2 tablespoons maple syrup (adjust to taste)

1 teaspoon vanilla extract

½ teaspoon cinnamon

1 tablespoon chia seeds (optional, for added texture)

¼ cup Greek yogurt (or dairy-free alternative)

2 tablespoons chopped pecans or walnuts (optional)

Pinch of salt

Instructions

In a medium mixing bowl, combine the rolled oats, almond milk, diced peach, maple syrup, vanilla extract, cinnamon, chia seeds, and a pinch of salt.

Stir everything together until well combined. Make sure the oats are submerged in the milk.

Divide the oat mixture evenly into two mason jars or airtight containers.

Top each jar with a dollop of Greek yogurt, a few slices of reserved peach, and a sprinkle of chopped nuts if using.

Seal the containers and refrigerate for at least 4 hours, preferably overnight, to allow the oats to soak up the flavors and soften.

In the morning, give the oats a good stir. If desired, you can add additional milk to reach your preferred consistency.

Enjoy the peach cobbler overnight oats cold, or you can warm them slightly in the microwave for a comforting breakfast treat.
