Ingredients

2 cups elbow macaroni

4 cups vegetable or chicken broth

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 tablespoon unsalted butter

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup frozen peas (optional)

¼ cup grated Parmesan cheese (for topping)

Fresh parsley for garnish (optional)

Instructions

Combine the Pasta and Broth: In a large pot, combine the elbow macaroni and vegetable or chicken broth. Bring to a simmer over medium heat, stirring occasionally, until the pasta is al dente and most of the broth is absorbed (about 8-10 minutes).

Add the Dairy and Seasonings: Once the pasta is cooked, reduce the heat to low and stir in the whole milk, butter, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until the butter is melted and everything is well combined.

Cheesy Goodness: Gradually add in the shredded sharp cheddar and mozzarella cheeses, stirring continuously until the cheese melts and forms a creamy sauce. If you’re adding peas, stir them in at this point.

Adjust Consistency: If the mac and cheese is too thick, feel free to add a splash more milk or broth to reach your desired consistency.

Serve and Garnish: Remove the pot from heat. Transfer the mac and cheese to serving bowls, sprinkle with grated Parmesan cheese and garnish with fresh parsley if desired.

Enjoy: This one-pot wonder is ready to be enjoyed! Perfect for school lunches—pack it in thermoses to keep it warm until lunchtime.
