12 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

4 slices of bacon, chopped

1 small onion, chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 packet (1 oz) ranch dressing mix

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup shredded cheddar cheese

2 tablespoons olive oil

Salt and pepper, to taste

Chopped fresh parsley, for garnish (optional)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Once done, remove the bacon and set it aside, leaving the drippings in the pan.

    Sear the Chicken: In the same skillet, add 2 tablespoons of olive oil if necessary. Place the diced chicken in the drippings and season with salt and pepper. Cook until browned and no longer pink in the center, about 6-8 minutes. Remove the chicken from the skillet and set aside with the bacon.

      Sauté the Aromatics: In the same skillet, add the chopped onion. Cook until softened and translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

        Add the Pasta: Pour in the chicken broth and bring it to a simmer. Add the penne pasta to the broth, stir, and cover the skillet. Cook according to the package directions until the pasta is al dente, usually about 10-12 minutes. Stir occasionally to prevent sticking.

          Make it Creamy: Once the pasta is cooked, reduce the heat to low. Stir in the heavy cream and the ranch dressing mix, mixing thoroughly until well combined.

            Combine Everything: Add the chicken back into the skillet along with the cooked bacon, halved cherry tomatoes, and baby spinach. Stir gently until the spinach wilts and everything is heated through, about 2-3 minutes.
