1 cup finely grated zucchini (about 1 medium zucchini)

1 cup rolled oats

1/2 cup nut butter (peanut, almond, or sunflower seed)

1/4 cup honey or maple syrup

1/2 cup shredded coconut (unsweetened)

1/4 cup chocolate chips or cacao nibs

1/4 cup chopped nuts (walnuts, almonds, or pecans)

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon

A pinch of salt

Prep the Zucchini: Start by washing the zucchini thoroughly. Grate the zucchini using a box grater or food processor. Squeeze out any excess moisture with a clean kitchen towel or cheesecloth. You want the zucchini to be dry enough that it doesn’t make your mixture soggy.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chocolate chips (or cacao nibs), chopped nuts, cinnamon, and a pinch of salt. Stir well to evenly distribute the dry ingredients.

      Combine Wet Ingredients: In a separate bowl, mix the grated zucchini, nut butter, honey (or maple syrup), and vanilla extract until smooth and cohesive.

        Combine Mixtures: Pour the wet ingredients into the dry mixture. Use a spatula or your hands to mix everything together thoroughly until all ingredients are well combined and stick together when pressed.
