2 cups rolled oats

1 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/2 cup mini chocolate chips (dark or milk)

1/2 cup mixed nuts (almonds, walnuts, cashews - roughly chopped)

1/2 cup dried fruit (raisins, cranberries, or apricots - chopped)

1/4 cup chia seeds or flaxseeds (optional for added nutrition)

1/2 teaspoon vanilla extract

A pinch of salt

Instructions
 

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving an overhang on two sides. This will help you easily lift out the bars once set.

    Mix Ingredient Base: In a large mixing bowl, combine the rolled oats, chopped nuts, dried fruit, mini chocolate chips, and chia/flaxseeds (if using). Stir until everything is evenly distributed.

      Combine Wet Ingredients: In a small saucepan over low heat, combine the almond butter, honey (or maple syrup), vanilla extract, and salt. Stir continuously until the mixture is smooth and slightly warmed. This will help it blend better with the dry ingredients.

        Combine Wet and Dry Mixtures: Pour the almond butter mixture over the dry ingredients. Use a spatula or wooden spoon to mix everything together until the oats and nuts are fully coated and the mixture is sticky.

          Press into the Pan: Transfer the mixture to the prepared baking dish. Use your hands or the back of the spatula to press the mixture firmly and evenly into the pan. Make sure the top is smooth and flat.

            Chill and Set: Place the baking dish in the refrigerator for at least 1-2 hours, or until the mixture is firm enough to cut into bars.

              Cut and Serve: Once set, lift the mixture out of the pan using the parchment paper overhang. Transfer to a cutting board and slice into bars or squares of your desired size.

                Store: Store the bars in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage.
