Ingredients

1 cup natural peanut butter (creamy or crunchy, your choice)

1/2 cup honey or maple syrup

1 cup rolled oats

1 cup crispy brown rice cereal

1/4 cup unsweetened cocoa powder

1/2 tsp vanilla extract

1/8 tsp salt

1/2 cup dark chocolate chips (optional for topping)

1/4 cup chopped nuts (optional, like almonds or walnuts)

Instructions

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides to make removal easier later.

Mix the Peanut Butter and Sweetener: In a medium saucepan over low heat, combine the peanut butter and honey (or maple syrup). Stir continuously until the mixture is smooth and melted - about 2-3 minutes.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, crispy brown rice cereal, cocoa powder, and salt. Mix well to combine.

Mix Everything Together: Pour the melted peanut butter mixture into the dry ingredients. Add the vanilla extract and mix until everything is fully combined, ensuring that all dry ingredients are coated.

Add Optional Ingredients: If using, fold in the dark chocolate chips and chopped nuts for added flavor and texture.

Press into the Pan: Transfer the mixture into the prepared baking dish. Press down firmly using a spatula or your hands to create an even layer.

Chill to Set: Place the dish in the refrigerator and allow the bars to set for at least 1 hour. This will help them firm up for easier cutting.

Cut and Store: Once set, lift the bars out of the dish using the parchment overhang. Cut into squares or rectangles. Store in an airtight container in the refrigerator for up to a week.
