Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/4 cup sugar

8 oz cream cheese, softened

1 cup powdered sugar

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1 tsp vanilla extract

1 cup mixed fresh berries (strawberries, blueberries, raspberries)

Fresh mint leaves, for garnish

Instructions

Prepare the Crust: In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.

Assemble the Cups: Using dessert cups or mason jars, evenly distribute the crust mixture at the bottom of each cup, pressing it down gently with the back of a spoon. Set aside.

Make the Lemon Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the powdered sugar, lemon juice, lemon zest, and vanilla extract. Continue mixing until well-combined and fluffy.

Layer the Filling: Spoon or pipe the lemon filling into each cup on top of the graham cracker crust, filling them about three-quarters full.

Add the Berries: Gently layer the mixed fresh berries on top of the lemon filling. You can leave some whole or slice them in half for a beautiful presentation.

Chill: Cover the cups with plastic wrap and refrigerate for at least 2 hours or until ready to serve. This allows the flavors to meld and the filling to set.

Garnish and Serve: Just before serving, garnish with fresh mint leaves for a pop of color and additional flavor. Enjoy your refreshing No-Bake Lemon Berry Cups!
